The view selector passes mobile variants as strings, while templates
carry them as symbols. Pin that the hook symbolizes both mobile and the
keys of mobile_idx so TemplateDetails lookups keep matching.

Check matches? as a predicate including a non-requested variant, make
sort_key_for show the requested mobile order, and state the generic
template fallback instead of relying on the trailing nil key.
